Granulated tapioca is, as its name suggests, made up of irregular tapioca grains. This is a by-product of tapioca gum and is obtained from the process of sieve in the pan, stirring until dry and hardening. Granulated tapioca is ideal for recipes for cakes, puddings and couscous.
